However, you'll also find uniquely Chilean takes on international favourites, from Italian pasta to French omelettes—each adapted with a local twist that highlights the creativity of traditional Chile foods.

Among the standout dishes are Paila Marina, a rich and comforting mixed shellfish soup, and Charquicán, a hearty beef stew. Charquicán has deep historical roots, dating back to the 1500s, when it was a staple for merchants travelling between the port of Arica and the mines of Potosí. These traditional recipes have endured the test of time and continue to reflect the soul of Chilean cuisine.
